Если дрожжевое тесто получилось слишком густым, тугим, плохо растягивается – это неправильное тесто. Тесто должно быть приятно мягким и эластичным.
При приготовлении домашнего дрожжевого теста иногда приходится исправлять его консистенцию. Тесто может получиться слишком густым, когда осваиваем новые рецепты или пробуем изменить хорошо знакомые.
Иногда причина в использовании муки других производителей, у нее может быть иная способность впитывать воду. Кроме того, никто не застрахован от ошибок при отмеривании ингредиентов.
Я более 10-ти лет пеку хлеб и булочки минимум 2 раза в неделю, довольно часто корректирую тесто, добавляя совсем немного воды. Кстати, без такой мелочи вполне можно обойтись. А уж едоки разницу точно не заметят. Но почему‑то всегда хочется сделать идеальное тесто.
У меня есть тестомес, но пользуюсь им редко, чаше для бисквитного теста. Мне нравится месить тесто – это приятная гимнастика для рук.
Раньше добавляла воду, опрыскивая из пульверизатора. Хороший способ, но мне удобнее и быстрее делать это иначе. Об этом с картинками ниже.

Как исправить твердое тесто
Итак, замесили тесто, дали ему постоять 15‑30 минут, выкладываем на стол, слегка присыпанный мукой или смазанный растительным маслом (зависит от рецепта), начинаем вымешивать. Растягиваем, складываем, давим на него.
Если через несколько минут таких манипуляций вы почувствуете, что тесто тугое, оно плохо растягивается и даже стремится сжаться, надо добавить воду.
- Превращаем тесто в лепешку, пальцами делаем ямки.
- Острым ножом на поверхности теста делаем решетку глубиной не более 0,5 см.
- В зависимости от количества теста выливаем, разбрызгиваем на него 1‑2 чайных ложки воды. Большим ножом втираем воду в поверхность теста. Движение руки как при заточке ножа бруском или наждачным камнем: вперед‑назад, вправо‑влево.
- Складываем лепешку вдвое как вареник и собираем склеенные края в пучок.
- Аккуратно вымешиваем, т. е. давим и растягиваем осторожно. Буквально через полминуты уже можно месить как обычно, вода не вытечет. Если тесто всё еще тугое, повторяем процедуру с добавлением воды, пока тесто не станем эластичным и достаточно мягким. Округляем.
Вот такие булочки получились из этого теста.

К сожалению, с новичками иногда случаются неприятности, когда тесто получается очень твердым, когда опрыскивание не помогает, вода просто стекает с него. Что делать? Расскажу о своем опыте.
Много лет назад мои соседи впервые в жизни собрались печь куличи. Стоит отметить, что продукты в рецепте были указаны в стаканах.
Они набирали муку с большой горкой, а не под нож, как следует. Не обратили внимания, что в пакете молока 900 мл, а не литр. Соединили все компоненты, пытались вымешивать тесто, но оно оказалось очень твердым. Читали советы в интернете, орошали тесто из пульверизатора, ничего не получалось. Когда меня позвали, тесто представляло собой камень.
Я забрала тесто домой, с большим трудом порезала на маленькие кусочки, сложила в большую миску и обрызгала водой, перемешала. Увлажняла его несколько раз с интервалом, пока комочки теста не стали такими, что их можно было раздавить руками. Тогда я их натерла на крупной терке. Оставила постоять около 5 минут и уже потом минут 20 вымешивала. Все получилось, тесто поднялось нормально, испекли вкусные куличи. Точно не помню, по‑моему, за час я справилась.
