    Thicken a meat casserole the most popular way with flour. Add some flour to your pan after you’ve browned the meat and before adding any liquid. This way, the flour will soak up the juices and fat in the pan. Add about one teaspoon of flour at a time until you get the right thickness.[1]

    Then, roll the thick paste into little teaspoon-sized balls. Add one ball to your casserole at a time, waiting about a minute before adding another one, until you get the right thickness.[5]

Творожные десерты – родом из детства. Каждый, кто был в детском саду, помнит этот чудесный сладко-кисловатый вкус ароматного пирога, который был пышным, нежным и буквально таял во рту.

Многим хотелось повторить успех столовских поваров дома. Но почему-то ни покупка качественных ингредиентов, ни использование ультрасовременных гаджетов не помогали сотворить это чудо в своей духовке. А если лакомство и выглядело красиво сквозь окошко духовки, то, как только огонь погасал, с ним уходила и внешняя привлекательность десерта. Почему творожная запеканка оседает и становится скукоженной? А главное, как это предотвратить?

Почему творожная запеканка оседает

Не всегда – это нарушение техники приготовления. Хотя иногда причина таиться именно в том, что лакомство чуть не допекают. В выключенной горячей духовке оно, конечно, «дойдет», но за это время высота сядет в несколько раз.

То, что выпечка с творогом садится – это нормально. Если усадка дается в рамках 2-3 мм. Все, что больше, считается недочетами повара.

Еще один важный момент, почему мы можем потерять форму запеканки – слишком жидкий или «мокрый» творог. Причины тому две:

  • плохо отжатый продукт – в нем остался высокий процент сыворотки;
  • творожная масса – она сладкая и всегда достаточна влажная (сахар отдает воду во время выпекания).

Кроме того, причиной усадки могут стать:

  • яйца — в запеканку их кладут в достаточно большом количестве, примерно 3-4 шт. на 500-600 г творога, что делает массу тоже достаточно жидкой;
  • взбивание теста – не нужно его перебивать с помощью блендера или миксера, это мешает массе стабилизироваться в процессе выпекания;
  • избыток рахрыхлителя – он насыщает тесто кислородом и поднимает его, но как только запеканку достают из духовки, то она заметно падает в высоте;
  • вынимание из духовки сразу после выпечки – творог тот же сыр, поэтому ему нужно немного времени для застывания;
  • использование только муки – самостоятельно она плохо фиксирует творожное тесто, а если ее вмешать больше, то можно получить «резину»;
  • много добавок – сухофрукты, ягоды и свежие фрукты содержат много воды, которая не нужна в избытке для творожной запеканки.

Секреты приготовления пышной запеканки из творога


Очень важно покупать качественные натуральные продукты. Творог лучше брать домашний посуше. Либо отдать предпочтение покупному зерненому. Никаких заменителей в виде творожных продуктов или паст – это приведет «кулинарному фиаско».

  1. В тесто лучше всего добавлять яйца, который взбиты отдельно. Считается, что даже лучше перебить белки с солью, а с желтки с сахаром. После они вводятся в тесто аккуратно и по очереди
  2. Разрыхлитель или сода вообще не нужны. Обойтись без них в этой выпечке можно свободно, но если очень хочется попробовать, то класть стоит совсем немного
  3. Муку стоит миксовать с крахмалом (достаточно 2-3 ст.л. кукурузного или картофельного) либо заменять ее часть манкой. Некоторые предпочитают добавлять измельченные хлопья Геркулес. Важно помнить, что при использовании крупы, нужно дать выстояться тесту не менее 1 часа. За это время она набухнет и заберет лишнюю влагу. Кстати, с ее помощью можно спасти слишком влажный творог для запеканки
  4. Нельзя лишний раз открывать духовку. Лучше ограничится контролем через смотровое окно и открытием только по истечению времени для протыкания шпажкой. Если пирог готов, то следует закрыть духовку и дать запеканке остыть там.
  5. Из добавок стоит отдавать предпочтение сухофруктам и не нужно их распаривать перед использованием – это добавит им влаги. Просто ополосните их в кипятке и обязательно просушите перед отправкой в тесто. Сырые ягоды лучше вовсе не использовать в приготовлении или сделать из них декор уже на готовом десерте.

Поднять запеканку помогут пару столовых ложек жирной сметаны в тесте.

И еще очень важный нюанс – выбирайте форму по размеру с высокими бортами (лучше разъемными). Если тесто не очень много, то в широкой форме оно наверняка превратится в «блинчик».

Рецепт воздушной творожной запеканки


Ингредиенты:

  • творог 5% – 0,5 кг
  • банка сгущенного молока
  • яйцо куриное – 3 шт.

Для приготовления необходимо:

  1. Смешать творог с предварительно взбитыми яйцами. Перемешать до однородности;
  2. Влить сгущенку и снова перемешать;
  3. Выпекать в разборной форме при температуре 175°C около 50 минут.

Такая запеканка не отнимает много времени и сил. При этом получается высокой, пышной и не теряет свою форму.

Готовить вкусную и пышную запеканку из творога, всегда получая одобрение от домочадцев — проще, чем вы думаете. Соблюдайте простые правила приготовления и не бойтесь видоизменять рецепт на свое усмотрение.
